- We only buy grade 1 seafood from the most reputable distributors in the Northwest.
- We use Yamamoto Gold as our seaweed of choice. Like fish, seaweed comes in a variety of quality standards. Yamamotoyama Gold is considered the highest quality due to the time of year it is harvested from the sea.
- Nishiki Rice is unique in that it far exceeds the high quality rice standards set by the USDA. It has two advantages over typical white rice. First, it contains no talc so as it cools it never tastes "powdery." Second, the top layer of the rice known as the rice bran is milled off which helps the rice maintain its color and taste.
